Quinoa and Kidney Bean Salad


Saturday evening, while making my grocery list, I almost put some chicken on the list, in order to make the Zuzka Light sexy abs recipe before I said to myself, why buy when you have plenty of stuff in your pantry? I walked over to the pantry, opened the doors and said to myself, you haven’t eaten Quinoa in awhile, and you haven’t used your beans yet, lets see what we can find. During my recipe search , I stumbled across this video:

I prepared the Quinoa in a water and oj mixture, and I made fresh beans from my Mason Jar dry bean stash. Let me just take a moment to say that the Mason Jar legumes, grains and beans idea is the best idea I have had yet. I truly use something from those jars at least once a day, ok back to the topic at hand. I had pretty much everything needed for the recipe already in my home, so after my grocery trip, I put some beans on to cook (I soaked them the night before.  While the Quinoa cooked, I chopped away, added spices, and by the time the Quinoa was done, I was done preparing the dish. The only change I made was to the parsley, I prefer Cilantro, and since she suggested substitutions, I chose to take her suggestion.

I made this dish for my lunch entree of the week. Yesterday I ate it cold and today I ate it warm, and I have to say I prefer it warm, but it was good cold. All in all, the spices really make this dish taste delicious, and the combo of protein and veggies is filling and seriously nutritious. This weeks lunch sides include Cherries, Cucumber (with salt and olive oil), Bell Pepper (Green and Red) and Hummus for dipping. I’ll talk about my work snack Thursday.




Ahhh, yea, I am back. I had to find my stride again since beginning work, and I am pretty sure I have it, so I will get back to this blogging business. Ok, when we left off I was optimistic about my progress, well, I got in a funk and was sad for a moment that I have not met my goals. After wallowing for a bit, I came to the conclusion that I really have to get my sugar intake under control, no more letting things slide. I’m back at 142 cause of sugar, however I am still exercising like a champ, which is probably why I haven’t gained a ton of weight.

I never did buy the Zuzka DVDs, which has allowed me to put off some exercise, well NO MORE! I signed up for ZGym today, so I will begin a personal 90 day challenge tomorrow. Yes, 90 Days, with 30 day body shot updates. I am following her schedule as outlined in ZGYM! 1st set of progress pics will go up August 13th, no matter what. I will continue to do Ashtanga yoga once a week and run as I feel able to.

I have recipes to review and post, so I will do that this week because my food intake is petty good aside from the sweets I so enjoy. Let’s do this, we have goals to meet!



I’ve been MIA for a bit because I started a new job last week. This job means that I am eating lunch at the office as opposed to at home. So now, I am bringing lunch and snacks to work. So far salads and sandwiches have worked for me, I want to start bringing soup next week, but I need a lunch  box. For those who read this occasionally, where do you get a lunch box from?

By the way, I lost ANOTHER pound, so I am down to 140 lbs, which is unbelievable to me. I am happy to have met my 15 lbs weight loss goal at this point, and I plan to continue and loose 10 more. My goal is still January 2014, but we shall see, it is more important for me to make small changes that will eventually get me to my goal, rather than quick and easy weight loss.

Fitness is still going strong and I have found two races that I want to run, one 5k in August and one Half Marathon in December. I am looking forward to the challenge of both. I am still running every other day, as weather permits, and I am now consistently going to yoga. I wanted to wait until my gym contract was up before I began paying for yoga. I am going to Yoga class twice a week, class #1 is Ashtanga (one can never go wrong with the primary series), and class #2 is Hot Yoga (I LOVE how my body feels after this class). I am going to my old faithful Yoga studio, I first went there in 2006 and have been going ever since because it is just that great of a studio.  When not running or doing Yoga I do a ZWOW, but now that Zuzka has her whole online thing, I am going to start the Strength Training DVD next week. I’m excited to see what changes that will bring.

I will post a video this weekend showing my Six Month progress and talk about my plans for continuing this journey to a more fit me.

Weekly Update: 06/11/13


I did it again, I lost another pound, this brings me to 141! That means so far this year I have lost 14 lbs, and I did it in a sustainable way. Which means I have kept off the pounds, made great permanent changes, and I have solid plans to continue on this journey until I reach my 20 pound goal, and beyond.

This past week was great in the food department, I have another recipe to review, and I used papaya in my smoothies this week. I have never used an actual papaya before, just papaya juice, so that was an interesting change. I discovered that I do not really like papaya by itself, you live and you learn. I froze fresh beans for the first time last week, I plan to use them in salads and for bean curry, which I haven’t had in awhile. I mostly ate fish last week and chicken last week, with some cheesecake factory thrown in there while out of town. My sweets for last week included Fat Boy Mini Ice Cream Sandwiches and Apple Pie.

I also managed to get in my three runs last week, but no strength training. I will start the Zuzka Strength series next week, but in the mean time I plan to get at least 4 runs in this week and a ZWOW twice this week. I plan to try a new taco recipe this week as well. As you can see, I am taking this health thing a week at a time because it seems to be working for me.

A Quick and Easy Couscous Dinner Review


One night last week I was trying to decide what to eat for dinner, and instead of being proactive and walking into my kitchen, I procrastinated by hopping on my computer to watch Youtube videos. During my perusal, I came across a new Zuzka Light video in which she shared a new recipe:

As I was watching I realized that I had almost all of the ingredients for this recipe sitting in my kitchen, as a result I decided to get off of my bum and make this Sexy Abs recipe. The only ingredient I did not have was canned tomatoes, but I did have half of a tomato in my fridge which I had previously used for a salad, so I simply substituted half a real tomato for the canned tomato. I would have used a whole tomato if I had one, but it did not make a difference in the recipe. I even mixed together her spice mixture because I like to follow the recipe the first time, and then make any necessary changes the next time if I decide to make it again.  Well, of course I made the dish and was pleasantly surprised.

This dish packs great flavor, and its not that healthy food type of flavor, no its just good flavor in general. The spice mixture is really quite delightful and I did not even realize that there was no additional salt in the recipe until I was half of the way through eating because it did not need any extra salt. I made four portions from this recipe, I ate it twice as is, and I added the mixture along with lettuce for a wrap the next two times. It was so delicious! As far as quick goes, well once you start cooking, it is quick, but I have to say its not a 10 minute meal, more like 20, so its still quick, just not as simple one pot meal quick. Was it easy, quite so, I mean there were no special techniques involved, which makes this ideal for any level cook. I will make this again and I encourage you to give it a go and tell me what you think!

Weekly Update



This means that my detox did what I wanted it to, it gave my body a little shock and a boost. I have been consistently getting my runs in, 3 a week so far. I hope to bump it up to 4 a week, but it is going to depend on time as I am doing more traveling this summer. Zuzana of Zuzkalight.com has come out with a strength series and I plan to begin that as soon as the videos arrive alongside my running. The running is a great stress reliever for me, it also seems to give me more energy and I can’t help be happy with how my legs are beginning to look. I took some new body photos this weekend that I will share this week once I load them.

Food has been so much better on my part since deciding to allow myself sweets. I have stopped binging and am instead controlling my sugar intake. Cold turkey is not the way to go for this sugar addict, instead controlling when and how frequently I  intake my allowed sweets seems to be a better solution. I have been trying some awesome recipes, so I will be sharing those as well. Its been almost 6 months since I began this health journey, and so far things are going great!!! I am slowly making changes (be sure the health changes tab to keep up with those), and as a result I have more energy, my skin is glowing, and I just plain feel good!

Lemon Water


 Every since I did Shred, I have been drinking lemon water    each and every morning. I stopped for about a week, and my digestion was just not the same, so I started back and have been happy ever since. I have tried organic and non-organic lemons and the difference is taste, not results. The organic lemon water has less of a bitter taste and much more of a refreshing taste. The ratio I use is 8 oz water to the juice of 1/2 a lemon. There is absolutely no point in doing this with anything except fresh lemon juice, otherwise you are not getting the benefits. I drink the water first thing, before I am even aware of life :-).

 The benefits of drinking lemon water:

1.Lemon water will help you cleanse your body of toxins, which is going to show on your skin. Lemons are full of skin-rejuvinating and anti-aging products.

2. Lemon water will improve your digestion. The lemon juice will activate the production of bile in your digestive system and when combined with water it will flush out the unwelcome stuff from your body to help with bloating and heartburn.

3. Lemon water eliminates headaches.

4. Lemon water fights infections. The high amount of Vitamin C in lemons fights illness.

5. Lemon water helps with weight loss. Lemons are full of pectin fiber, which will regulate your hunger levels.
