My Soup Files | Easy Lunch



I saw this idea on Pinterest and thought it was brilliant! At the beginning of the month I took three separate days and made 3 soups with 8 servings each: Lamb and Lentil, Carrot Ginger, and Turkey Vegetable.

Before cooking the soup, I let it cool completely and then packaged in zip loc bags in single portions. I put them flat on a baking tray and stuck them in the freezer, so that each soup froze as compactly as possible.

imageThis is method left me with a total of 24 individually frozen fresh soups. No added preservatives, no ingredients I do not recognize, easy and hella tasty. In the morning I take out a “file” and put it in my lunch box along with a glass Tupperware bowl, by the time lunch rolls around the soup is thawed. I simply empty it into the bowl, microwave the soup and throw away the ziplock bag. *i put a half cup of quinoa in the Tupperware when I take the Carrot Ginger soup to add protein which will make it more filling*

This has been freak in AMAZING! This made more than enough soup for the work week for the month. I am more than sure that I will continue doing this for at least a little while. I tend to eat other options over the weekend, and I find three soups is enough variety to keep me interested and happy with my lunch choices each week.

I’ve Hit a Plateau: April Results


It took me a month to make that assertion, but as far as my weight loss goes I have hit a plateau. Last month I did not lose any weight, I did maintain at 43 lbs, and lost 1 inch. This confirms for me that I am toning up, thanks to Zuzka, my cellulite is disappearing (every woman’s dream). As a result I will continue to do Zuzka, however I have to change something about my fitness because my body is used to what I have been doing.  I have to re-evaluate my cardio, and do what has worked for me in the past, the gym machines are not cutting it.

Food-wise, my eating is going well. I have successfully managed to incorporate oats, seeds, and grains into my everyday life. However, my vegetable consumption has fallen a little by the wayside, I need to be sure to eat a serving of veggies with 3 of my meals.  This past month I ate 1200 calories a day as well as 1500 to determine just what is right for me, and after that experiment, I have determined that 1200 is right for me, with a little extra when I exercise. Green smoothies have become a way of life for me, so that is great,  I have continued to drink one a day and I find them very satisfying. I managed to have my requisite tea most days, and I have actually become more interested in more teas, so I can safely say that is a change that I will probably become habit.

I will post my May-July plan tomorrow. I want to do a 3 month plan this time, evaluating food each month.

April Challenges: Week 2 Update



This week I cheated, as I stated in a previous post, my sweet tooth took over for a couple of days. However, I got back on track by the weekend and I now have new dessert choices in my house for next time that craving for sweets kicks in. I have managed to eat Quinoa twice this week, so I am good on that, however I have not been drinking tea twice a day this past week. That may be one of the reasons my sweet tooth kicked in, when I was drinking tea, I didn’t crave sweets as much (hmmmmm).


I have been LOVING Zuzana’s workouts!!! This past week, I decided to start at number one and do the first thirty instead of jumping around by doing 6 ZWOW’s a week. After doing the first 30, I will go back and do them again hoping to beat my original times. I also did cardio with 5 of the 6 ZWOW’s (went for a run twice, arc trainer once, and treadmill once).

He lost 63 pounds in one week!


A guy calls a company and orders their 5-day, 10 lb. weight loss program.

The next day, there’s a knock on the door and there stands before him a voluptuous, athletic, 19 year old babe dressed in nothing but a pair of Nike running shoes and a sign around her neck. She introduces herself as a representative of the weight loss company. The sign reads, “If you can catch me, you can have me.”

Without a second thought, he takes off after her. A few miles later huffing and puffing, he finally gives up. The same girl shows up for the next four days and the same thing happens. On the fifth day, he weighs himself and is delighted to find he has lost 10 lbs. as promised.

He calls the company and orders their 5-day/20 pound program. The next day there’s a knock at the door and there stands the most stunning, beautiful, sexy woman he has ever seen in his life. She is wearing nothing but Reebok running shoes and a sign around her neck that reads, “If you catch me you can have me”. Well, he’s out the door after her like a shot. This girl is in excellent shape and he does his best, but no such luck. So for the next four days, the same routine happens with him gradually getting in better and better shape.

Much to his delight on the fifth day when he weighs himself, he discovers that he has lost another 20 lbs. as promised. He decides to go for broke and calls the company to order the 7-day/50 pound program

“Are you sure?” asks the representative on the phone. “This is our most rigorous program.”

“Absolutely,” he replies, “I haven’t felt this good in years.”

The next day there’s a knock at the door; and when he opens it he finds a huge muscular guy standing there wearing nothing but pink running shoes and a sign around his neck that reads, “If I catch you, your @@@ is mine.”

He lost 63 pounds that week.





April Challenge: Fitness


I want continue to do easily accessible fitness that I do not have to pay for at least until my gym membership runs out. I really do not see the sense in paying more each month to get my fitness in. I rather spend the money on fun active things, clothes, etc.  So, I have been scouring Youtube for a channel that will give my the type of workouts I like to do, that can be done either at the gym or at home because I do not want to be dependent on my gym. Why Youtbe? Because I can access it on my tv and phone making it a great portable workout source.  After looking at several great fitness channels, I decided on Zuzka Light:

Her workouts are short, she explains each workout, their free, and I aspire to have a body that looks more like hers.  I intend to do at least 4 ZWOW’s each week, and I will take a run each week for a total of 5 workouts.  I will also continue to go to Tennis twice a week, because I am enjoying myself (I am learning to play, so its not much of a workout yet), and I plan to start belly dancing classes next month (again in the beginner stage, so not much of a workout, just fun).

I will take Before pics next Monday and post them along with the first ZWOW I choose to do.

April Challenges: Healthy Changes


For the month of April I have decided to do a 30 Day Green Smoothie Challenge, hosted by the Simple Green Smoothies website.  I am going to drink two green smoothies a day and stay away from processed foods.


You can check out the website by clicking the photo above, I would be happy to have people join me for the month.  I also plan to challenge myself to eating Quinoa instead of brown rice next month. I will do a separate post about the benefits of Quinoa, and share recipes along the way.  I ate Quinoa with my meal last night, and I do not think that commitment will be a problem. In preparation for next month, I went to my local health food store and stocked up on Quinoa (just half a lb), and some fresh fruit (farmer’s market/grocery store sale items).  My goal for the next week is to take advantage of sales and strawberry season by buying fresh fruit and freezing it. If you have never done so before, its quite easy and much more tasty than the fruit you buy previously frozen.  So far, I have frozen banana, mango, pineapple, and strawberry.

The people will send a grocery list before the challenge begins, so I will buy more fruit and my greens then. I am excited to see what this challenge does for my body. Once I decide on my fitness challenge for next month I will report in.
